Leftover Night!

Name 1 thing you hated as a kid and absolutely love as as adult!

First of all- as I’m typing this I’m already thinking to myself there’s LOTS. So many things I didn’t like as a kid that I now love as an adult or things that I didn’t understand as a kid that I know can’t live without as an adult. Like quiet time- kids, please please please just give me a minute. Or talking to my mom when she was on the phone- she used to get so frustrated at me for talking to her while she was on the phone, fast forward 30 (yikes, yes 30) years and I only have one word. KARMA!!

But back to the original point- LEFT. OVER. NIGHT. 🙌

As a kid, even as a newly married young adult, leftovers were not my thing. I would make a dish, eat that meal once, stick the leftovers in the fridge, until it was time to throw that food out. But now that I have been granted the honor and blessing of feeding these tiny, constantly hungry little people- it drives me crazy to waste food, much less throw away a meal I actually spent time planning and making!! So one of my “new found” favorites since becoming a mom is leftover night.

Who says family dinner has to include all of us eating the same thing?! We can still sit together, at the table, talking about our day and each be eating some different leftover meal. Our oldest son’s preferred method of leftover night is for me to heat everything up, put it all in the middle of the table, and we all get little bits of all of it- like a southern family style tapas meal.

What are some of the things you’ve grown up to appreciate as an adult? Any “fancy” ways to deal with the leftovers in your house? Or do you just dump and pile it “Cloudy with a Chance of Meatballs” style?
